Luckily, I planned in advance and made sure to stock my pantry with plenty of healthy ingredients I could play with during the blizzard.<\/p>\n<p>The first thing on my list was this carrot cake bites recipe I tried at <a href=\"http:\/\/shop-links.co\/1561026691167174140\" target=\"_blank\">Nama<\/a> in London. The only problem was, I vowed to give up processed sugar in 2016, so I couldn\u2019t totally copy the delicious recipe. I\u2019m also in the 3<sup>rd<\/sup> week of the <a href=\"http:\/\/shop-links.co\/1561026711127453730\" target=\"_blank\">Clean Program<\/a>, so even \u201chealthy\u201d sweeteners like maple syrup, agave nectar, brown rice syrup and honey were off limits. These boundaries forced me to get even more creative.<\/p>\n<p>The result? Carrot Cake Snow Balls sweetened with coconut nectar and dates, two nutritious ingredients that are raw, vegan and gluten-free. They turned out so well they\u2019re making me think I could get used to this whole no sugar thing.<\/p>\n<p>Try them and let me know what you think!<\/p>\n<p>* Platter by <a href=\"http:\/\/shop-links.co\/1561026738966526531\" target=\"_blank\">Terrafirma<\/a>.<\/p>\n<p><a href=\"http:\/\/shesintheglow.com\/wp-content\/uploads\/2016\/01\/DSC04261-e1453738395795.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10917\" alt=\"Raw, Vegan, Gluten-free Carrot Cake Balls\" src=\"http:\/\/shesintheglow.com\/wp-content\/uploads\/2016\/01\/DSC04261-e1453738395795.jpg\" width=\"1366\" height=\"768\" \/><\/a><\/p>\n<p><b>Carrot Cake Snow Balls \u00a0<\/b><\/p>\n<p><b>Serving: <\/b>1 dozen 1-inch balls<\/p>\n<p><b>Total time: <\/b>15 minutes<\/p>\n<p><b>\u00a0<\/b><\/p>\n<p><b>Ingredients:<\/b><\/p>\n<p>\u00bd cup cashews<\/p>\n<p>12 pitted dried dates<\/p>\n<p>\u00bd teaspoon coconut nectar<\/p>\n<p>1 \u00bc teaspoons cinnamon<\/p>\n<p>\u00bd teaspoon cocoa powder<\/p>\n<p>\u00bc teaspoon nutmeg<\/p>\n<p>2 large carrots<\/p>\n<p>\u00bc cup chopped pecans<\/p>\n<p>\u00bc cup shredded unsweetened coconut<\/p>\n<p><b>\u00a0<\/b><\/p>\n<p><b>Directions:<\/b><\/p>\n<p><b><\/b>1. Pour shredded coconut onto a plate. Set aside.<\/p>\n<p>2. Place nuts in a mini blender or food processor (I use the <a href=\"http:\/\/shop-links.co\/1560935980373861344\" target=\"_blank\">Cuisinart Mini-Prep Food Processor, 3-Cup<\/a>) until finely ground and transfer to a medium size mixing bowl.\u00a0 Set aside.<\/p>\n<p>3. Place dates in a blender (I use this <a href=\"http:\/\/shop-links.co\/1560935727588770403\" target=\"_blank\">Vitamix<\/a>) and blend until ground.\u00a0 Add the ground nuts, maple syrup, cinnamon, cocoa powder and nutmeg to the dates and blend until everything is mixed together.\u00a0 Scrape the sides of the blender and re-blend if needed. \u00a0Transfer mixture to mixing bowl.<\/p>\n<p>4. Peel carrots and chop off one end.\u00a0 Holding the un-chopped end of one of the carrots, begin shredding with a small shredder, until the carrot is too small to continue shredding.\u00a0 Repeat with second carrot.\u00a0 Place carrots in your mini blender and blend until ground.\u00a0 Hand-mix carrots together with nut-date mixture until everything is combined.<\/p>\n<p>5. Scoop one tablespoon of mixture into hands and roll into a ball between palms.\u00a0 Repeat with remaining mixture.<\/p>\n<p>6.
